Obtained from a characteristic pasteurized sheep's milk processing, this cheese matures 30 days before being placed in the "fossa", a pit dug into the ground and lined with straw. These last few months give it a very particular taste given by the ages and the morphology of the pit. it is golden and very compact cheese with a very original flavour.

Di Pietrantonio familiy looks after the sheep to have a good milk, milks the herd and finally turns this delicious milk into wonderful cheeses, to communicate the authentic flavours of the pastures of the Marche.
General Information: Cheese is delicious both au naturel and paired with a sweet jam or with cured meats for an appetizer or an aperitive, excellent also as seasoning for main courses. How to eat: Cut cheese into 1 cm slices and serve it with honey or jam or cured meats, you can use this cheese also to prepare salads or shaved above main courses; enjoy it in the way you prefer.
