L’Oliva Tenera Ascolana è la regina tra le olive verdi da mensa e un patrimonio del territorio marchigiano. La coltura ha la sua area di diffusione intorno alla provincia di Ascoli Piceno, è una pianta piuttosto longeva e il suo frutto viene utilizzato in verde, ma fornisce anche un Olio di grande qualità, a bassa acidità, molto leggero, fruttato e dal gusto dolce e armonico, di colore verde tendente al giallo. Le olive sono lavorate entro le 24 ore dalla raccolta e permettono di ottenere un olio extravergine con un alto contenuto di polifenoli e sostanze aromatiche.
