A simple alternative to milk cookies, these Pastarelle Cookies are great for every day breakfast or to accompany a good afternoon tea. Typical of the Marche, and widespread in the province of Pesaro and Urbino between the nineteenth and twentieth centuries, they are made with a simple short pastry, flavoured only with lemon zest. They have a genuine taste, but refined, and a texture that gently melts in your mouth. In the past, these exquisite delicacies were served at special snacks, accompanied by hot chocolate or sweet wine.

Pastarelle Cookies are made with an organic flour short pastry and cane sugar, eggs, butter and lemon zest. Ammonium bicarbonate is used as leavening agent, particularly suitable for the preparation of biscuits and pies because it makes them more brittle and lighter. They have a rectangular shape, slightly irregular, fragrant texture but a simple taste, typical of traditional recipes, made with natural ingredients from the surrounding countryside.

Rinascimento a Tavola is a brand of gourmet products, including sweet and savory biscuits, born from the passion of its creator, Daniela Storoni, for Renaissance culture. Located in Urbino, one of the cradles of the Italian Renaissance, on the hills of the Southern area of Montefeltro, this laboratory of excellence contains a synthesis of culinary excellence of the Italian Renaissance courts, through the use of specific techniques for the preparation and culinary and symbolic references. How to eat: The cookies can be pleasing protagonists of tasty snacks, breakfasts or tea breaks but can also be great as dessert; they should be served, according to the occasion, with tea, coffee, hot chocolate or sweet wines, in their simplest version or together with a teaspoon of jam, honey or fruit jelly.
