The handmade Panettone from Mimosa pastry has a fine selection of precious raw materials and chocolate, but most of all it's prepared using a special dough that is affectionately called "Dino" from the name of Roberto's grandfather. The Pastry Chef Roberto Cantolacqua dedicates a lot of care to this precious ingredient “lievito madre” that is the base of every leavened cake characterized by a unique softness, by intense aromas and greater digestibility. That's what Roberto says: "all mixture dough products are better, tastier, more fragrant and more healthy."

Since he was a child, Roberto took on with pastry making, thanks to his grandfather who owned a bakery. He has worked since he was teenager in the bakery, a fine flagship of Tolentino. He could be considered one of the best young italian pastry chef, thanks to his innovative and unique products, beautiful to see, and absolutely fine to taste.

General Information: The Panettone is a typical Italian dessert during Christmas Holiday, more widespread in northern Italy, but known and appreciated in the rest of the Peninsula. How to Eat: Cut a slice of Panettone about 1 cm width and serve on a plate next to a glass of sweet wine, will be enough to get a magnificent Christmas dessert.

Main mixture: wheat flour, butter, sugar, egg yolks, 12% dark chocolate (cocoa beans, sugar, cocoa butter, emulsifier: soy lecithin, natural vanilla extract, milk chocolate 12%, cocoa butter, powdered whole milk, sugar, egg yolk, natural vanilla extract, emulsifier: soy lecithin, barley malt extract), yeast, honey, orange pasta, lemon pasta, salt, barley malt, vanilla beans.
