The marzipan, also called "pasta reale", and made with sugar, egg whites and almonds, dates from the thirteenth century and is the filling of these wonderful sweet tortelli made from Rinascimento a Tavola to recall a delicacy savoured for special occasions by the nobles of the sixteenth century.
