This special bean called Solfi or Solfino is small but swollen and it takes its name from the yellow colour of the sulfur. It is a legume rich in nutrients and low in fat. It has special qualities, a thin skin, a creamy texture and a delicate flavour with good handle during boiling and cooking.  The sowing of Solfì beans is made in April and the harvest is expected in late July. These vegetables grow best in poor dry soils.  It is not easy to grow it because many operations must be performed by hand also weather conditions may affect the amount of the harvest. But at the end, after boiling and preserved into salt and water these beans are ready for several recipes.
