The Solfì Beans is small, swollen, pale yellow, and owes its name to the characteristic yellow sulfur (hence called zolfino or Solfino and to shorten Solfì). It is a legume rich in nutrients and low in fat. It has very special qualities, a thin rind, a creamy texture and a delicate flavour. Boil them in salted boiling water for about 40 minutes, or at least until they are tender. Enjoy them according to the recipe you have chosen.
