These are the Beans "Eye of the Moon", called by such an original name because they are very clear and precisely around the hilum they have a small blue eye, just like a small moon. The beans "Eye of the moon" have the character to be very clear and have a halo blue around the hilum. This variety, unique in its kind, presents the qualitative and nutritional aspects of the Solfì Beans; both of which have a very fine skin, a creamy consistency and a mild flavor and keep very well cooked without flaking.

General information: Legumes are perfect for the creation of delicious soups, but with the addition of tomato sauce or other flavours, they can also be used to toss pasta dish. In any way you want to enjoy them, you need to cook them first. How to eat: soak the legumes for approximately 12 hours. Boil them in salted boiling water for about 40 minutes, or at least until they are tender. Enjoy them according to the recipe you have chosen.
